I made these cupcakes last year for a company thanksgiving pot-luck at work, and it’s a great single-serving ode to the classic sweet potato casserole. While a bit denser than my typical cupcake, they were a big hit among my coworkers.
I had purchased some Kohlrabi at our local farmer’s market and was exploring how to prepare it. I came across a recipe for Kohlrabi fritters, but also heard they were good with curry powder, so I made my own adaptation, which came out really well. Even my kids gobbled them up!
